
St. Brendan’s No Bake Spiked Pumpkin Pie Bites

These No-Bake Spiked Pumpkin Pie Bites will add some extra spice to your fall-themed parties.
INGREDIENTS
- 1 15 oz. Can of Pumpkin Puree
- 1 Large 5.1 oz. Jello Vanilla Instant Pudding
- 8 oz. Whipped Cream (Use Container of Whipped Cream)
- 1 c. Saint Brendan’s® Irish Cream
- 2 tsp pumpkin spice
- ½ tsp ground cinnamon
- 48 Athens Mini Phyllo Cups (already cooked/find in freezer section)
Optional Toppings:
- Canned whipping cream
- Crushed graham crackers
DIRECTIONS
- In a large mixing bowl, add in the Instant Vanilla Pudding. Add in the pumpkin spice and cinnamon. Whisk well with a fork.
- Then add in your can of pumpkin puree & Saint Brendan’s Irish Liquor. Whisk for 2 minutes.
- Bake the mini phyllos in the oven at 350 for 5 minutes (optional but I like the crust a little crispier) Let cool for 5 minutes after.
- Pipe the pumpkin pie mixture in the mini phyllo cups. Add whipped cream on top & crush graham crackers. Enjoy!
Makes 48 bites or filling for 2 pies
**Note: The whipped cream will start to melt on top so put that on last before serving – keeping in fridge until ready to serve is also perfect!
**Note: The filling lasts very well in the phyllo cups overnight in fridge – enjoy 3 to 5 days after making
